I was fortunate to have an incredible opportunity to work shoulder to shoulder with Guy Vaknin, the chef and the owner of Beyond Sushi in NYC. He taught me how to make vegan sushi that taste way better than seafood sushi. I learned how to soak 7 different rices in orange, lemon and grapefruit juices with some secret ingredients to get the most delicious sushi rice. Later, I turned on my imagination and began decorating each sushi piece with dehydrated fruits and raw/steamed vegetables topped with creamy, spicy, sweet and smoky sauces
